Make this easy pineapple coconut cooler. This is a perfect drink to get a summer taste without the sugar and with only 3 ingredients!

This drink obviously relates to a Pina colada with the pineapple and coconut flavors. It’s easy to grab a Pina colada mix and quickly make a smoothie, but most are loaded with high fructose corn syrup, sugars, and preservatives.
When summer comes around, I like treat myself here and there, but I don’t like to get carried away. When I am at home, I still like to make fun drinks and foods, but try to stick with good ingredients on the day to day.
This simple iced drink, with summer flavor, is totally guilt free and one I will be continuing to make.

INGREDIENTS FOR PINEAPPLE COCONUT ICED DRINK
- Coconut water
- Pineapple juice
- Vanilla extract
BENEFITS OF COCONUT WATER
I have yet to taste coconut water straight from a coconut, but I have come to like boxed coconut water. It’s benefits totally make it worth trying.
Coconut water is great for getting hydrated (naturally). It has natural electrolytes, and potassium which helps keep you hydrated. With the nutrients contained in coconut water, it’s possible it has more health benefits, as well.
When getting coconut water, make sure it is purely coconut water – I used C2O Coconut Water for this recipe.

HOW TO MAKE A PINEAPPLE COCONUT ICED DRINK
FIRST STEPS FOR THE GLASS
To garnish the glass, fill a small bowl with crushed coconut crisps.
Use a pineapple piece to juice the edge of the glass rim.
Dip glass upside down into coconut crips, in move in circular motion until you feel edge is covered enough.
FOR THE PINEAPPLE COCONUT COOLER
To get your pineapple juice, you can either juice it fresh, or just buy pineapple juice- but make sure to check the ingredients, so there are no added sugars or preservatives.
Once your juice is ready, grab a glass and fill it with ice.
Fill half with pineapple juice, and half with coconut water.
Add a dash of vanilla extract and stir.
FINAL STEP TO GARNISH
If you have a pineapple piece, cut a small slice in the middle with a knife and place on edge of glass.
Add a straw and enjoy!
