Learn how to make raspberry bark that is dairy free and refined sugar free! Sometimes you just want the treat without the sugar. This bark was inspired by Sweet Laurel Bakery’s Pistachio Rose White Chocolate Bark, which you can find here.

It is funny how much my taste pallet has changed throughout the years, which I guess is normal. I recently tried this sweet snack that, when I was little, I would get so excited if a friend’s house had them because my house never did. Ready for a trip down memory lane, I was instead hit with a little too much sweetness. When I took the bite, I could feel the grittiness of the sugar.
Don’t get me wrong, I love a good dessert or sweet treat. However, the artificial flavors are definitely what often stop me these days. Having a little treat on hand at home that I know is totally guilt free puts a nice smile on my face.
My sisters and I get excited when we can make a health-ier dessert – normally those two words don’t go together. Jenna came across Sweet Laurel Bakery online, and their recipes have been fun to try and stem from for sure!

RASPBERRY BARK INGREDIENTS
For this bark, I went ahead and followed Sweet Laurel’s chocolate recipe:
- 1 cup cacao bark
- 1 cup coconut milk powder
- 2 tbsp raw honey
- 1 tsp vanilla extract
- pinch of Himalayan pink salt (I used regular sea salt)
Additionally I added:
- 1/4 cup raspberries
- 1 tsp raw honey
TOOLS NEEDED
- 1-2 small pots
- 1 small bowl
- 8×8 pan
- parchment paper
- toothpick
- fork
- whisk

DIRECTIONS TO MAKE RASPBERRY BARK
Line 8×8 pan with parchment paper
Chocolate – following Sweet Laurel’s chocolate recipe
Make sure your cacao butter is chopped- this will help with melting.
Melt the cacao butter in a pot over low heat- it will look like melted butter.
Whisk in coconut milk powder and stir until smooth.
Add in vanilla extract and salt and continue to stir.
Remove from heat and let cool for about 10 minutes.
Slowly add in honey while stirring.
Pour chocolate into pan.

RASPBERRY SWIRL
In a bowl, add a small container of raspberries.
Mash raspberries until mostly pureed.
Add raspberries to a small pot on low heat.
Heat for 5-10 minutes until puree becomes a little more of a liquid while stirring occasionally.
Remove from heat and let cool for about 10 minutes and add honey.
Use a spoon to pour drops of raspberry liquid throughout the chocolate.
Drag a toothpick throughout the raspberry liquid and chocolate, which will create swirl effect.
Last Steps
Set pan in fridge until hard.
Remove bark from pan and break or cut into pieces.
